Sodium Citrate is a salt of citric acid with white crystalline or granular appearance. One of its main applications is as an anticoagulant for donated & collected blood. This compound is generally used in the concentration of 3.2% or 3.8% in blood bags. It works by binding to the calcium in blood to disrupt the coagulation cascade, thus preventing the formation of clumps. With E number E331, Sodium Citrate is used as a preservative & flavoring agent in food items as it has salty taste.
